Defranceschi-SACMI @ SIMEI 2024, a look to the future

People’s history, origin and terroir: the workplace as the key point. Its ergonomics, its simplicity in everyday life, respecting tradition but with the collateral damage of aesthetics. So Defranceschi brings to the fair his vision of the winery as an element of communication and the use of ceramics as a main missing link. The result is to apply the Sacmi culture in a revolutionary way of conceiving the tank, from vinification to aging. 

Two years after the 2022 edition, which welcomed over 30 thousand visitors from 50 countries, Defranceschi-SACMI is preparing for the 2024 edition of Simei international fair (12-15 November 2024,  Milano Fair) an opportunity to enhance its technological offer in the framework of an international event that, at each edition, confirms the great interest in Italian know-how in wine making machines.   

Attractive design, less water: new JP30 press

The key players at the Defranceschi-SACMI stand (Hall 3 - L11 M20) are first and foremost the pressing solutions, with the new JP30 open cylinder press. In the style of Defranceschi, the solution has already won great acclaim for its attractive design - a single press cylinder and frame with satin-finished exterior and mirror-polished interior for a virtuous ecology with energy consumption, maintenance times and minimized washing water consumption.     

Defranceschi tanks, born to astonish 

Even the exposed tanks, symbol of the brand Defranceschi around the world, will capture the attention of visitors. In particular, the company brings to Simei the elegance of bi-material design tanks: cobalt blue mirror steel ampoule suspended between two concrete wings. Also in this case, the collateral damage of aesthetics completes a mainly technical product, with the combined use of a stainless steel tank for food use that allows at the same time to take advantage of the thermal inertia of the cement of which the outer casing is composed.

Another strong point of Defranceschi-SACMI exposed to SIMEI 2024 is the vertical separation bi-cell tank, made of stainless steel, with the non-slip layered top in double satin cross steel (R11). The tank thus also becomes a structural element (catwalk) where the flushing water recovery channels are also integrated, limiting the cleaning operations and the derived consumption of water. This eliminates critical areas between the catwalk and the top of the tank, that are often complicated to maintain. Finally, the use of the double vertical compartment, eliminates an intermediate walkway, facilitating the operator’s work, in maximum safety.

Finally, the DESIGN tanks, with their unmistakable look covered in spectrale steel that accompany the unique story telling of a family, a terroir, a wine, with the help of the cellar as an element of identity and communication. This demonstrates the ability and skill of Defranceschi-SACMI to blend into the intimacy of the cellar, making it the leitmotif of a place, a story and its ability to integrate aesthetics and industrial functionality, skilfully combining the use of raw materials such as stainless steel, ceramics, cement and wood.

Even more functionality in tanks thanks to ceramic

Bringing SACMI’s know-how on materials to the oenological field, particularly in the ceramic sector, is Defranceschi's latest achievement and the basis for its latest innovation.
The world of enology needed a porous support capable of allowing a slight gas exchange to refine wines (for a period of many months) on fine lees in a thermoregulated environment with high thermal inertia. The new generation of tanks developed, has the ability to meet this need. This support did not exist until today and is, to all intents and purposes, the missing element in the world of enology, further qualifying the uniqueness of the proposal Defranceschi within SACMI, as it was, the ceramic stratification of the tops of the tanks. 

The solution will be the main protagonist of the Defranceschi panorama at the next sector fairs, starting with Simei, together with the new generation of barrique with ceramic bottoms, that is currently in advanced development, in collaboration with the well-known Champagne producer Henry Giraud, patent holder. As for the tank with ceramic plates, it is a proposal completely unprecedented! After more than 2000 years of history, the barrique is evolving, with the replacement of the traditional oak bottoms with two inductive ceramic bottoms, which are also suitable for heating the contents in the event of fermentation stuck, and which have the advantage of making the astringency of the tannins contained in the non-toasted bottoms disappear, with a support (the ceramic) that is completely inert. Potentially revolutionary innovation both in terms of the quality of the wine aging process, both for the opportunity to reduce the environmental impact with a virtuous ecology made of energy consumption, washing times and minimal water consumption, making also less burdensome the management of the barrique cellar. Finally, this solution allows to "save" about 6 liters of wine that would normally be absorbed by the two traditional funds, commonly called la part des anges.

Complete cellars: a combination of elegance, identity and technology

The complete cellar architecture, the geometry of the space in inventing new patented and distinctive solutions to enhance the uniqueness of the place and the identity of the producer, is the further strength of the Defranceschi offer that makes available to the world of architecture a project archaitecture, a playground for architects to interpret their vision with the collaboration of industrial design engineers.
